Tripe has very ancient origins in cooking, dating back to Ancient Greece and Rome. Over the centuries, it has appeared on tables of all social classes, keeping its strong ability to tell the story of the deep connection between people and food.

Starter: House-made cured meats and… a small surprise!
Main courses: Traditional tripe from Oltrepò Pavese, Pisan-style tripe, Ligurian-style tripe
Cheese: “Drunken” cheese
